Passion-Fruit Salad with White-Pepper Ice Cream

White-Pepper Ice Cream

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 6 large egg yolks
  • 1 teaspoon freshly ground white pepper
  • 1 teaspoon vanilla extract

Instructions:

  1. Heat the Cream and Milk:
    • In a medium saucepan, combine the heavy cream, milk, and half of the sugar. Heat over medium heat until the mixture is hot but not boiling.
  2. Whisk the Egg Yolks:
    • In a separate bowl, whisk the egg yolks with the remaining sugar until the mixture is pale and thick.
  3. Temper the Egg Yolks:
    • Gradually add a small amount of the hot cream mixture to the egg yolk mixture, whisking constantly to temper the eggs. Then pour the egg yolk mixture back into the saucepan with the remaining cream mixture.
  4. Cook the Custard:
    • Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Do not let it boil.
  5. Add Flavorings:
    • Remove the saucepan from the heat and stir in the white pepper and vanilla extract.
  6. Chill and Churn:
    • Pour the custard through a fine-mesh sieve into a bowl to remove any lumps. Cover and refrigerate until thoroughly chilled, at least 4 hours or overnight.
    • Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions. Transfer the ice cream to a container and freeze until firm.
